The POWER of PUMPKIN!

Many health professionals consider pumpkins a “super food” because it is rich in many beneficial vitamins and minerals. The fall is the peak season for pumpkins and can be found in abundance at your local grocery store or farmers market. But don’t limit pumpkin to only the fall and winter seasons. Since 100% pumpkin puree can also be found in grocery stores year round, feel free to give pumpkin a more frequent appearance at your house!
Pumpkins are great sources of both vitamin A and beta-carotene. Carotenoids, a phytochemical that has antioxidant properties are responsible for giving pumpkin its deep orange color, which has been shown to prevent cancer, heart disease, and diabetes.
Here is a super simple Pumpkin Smoothie recipe that is a great snack or breakfast addition:
INGREDIENTS:
- 8 ounces 100% pumpkin
- 1 cup vanilla soy milk
- 1 cup ice
- 1-2 tablespoons cinnamon
Combine all ingredients in blender and blend for approximately 1 minute. Enjoy right away!
